L'Astrolabe

L’Astrolabe, a classic French restaurant that offers a romantic poolside dining experience a touch of Caribbean culture. It is a wonderful place to visit during your stay at The Hills Residence Vacation Rentals in Simpson Bay Sint Maarten.

Open since 1995 but in 2000 Thomas the now owner took over the restaurant and created a welcoming atmosphere for staff and customers. L’Astrolabe specializes in fresh lobster and local catch, with excellent wine pairings. The restaurant’s ambiance is also important, with live music on Monday and Friday nights, jazzy tunes, and French music, creating the perfect atmosphere for a romantic evening. The three-course meal for 56 euros is a steal, featuring lobster night on Fridays and surf and turf on Mondays.
